Veggie Marinara Pasta

Lots of veggies in a marinara sauce. Mushrooms would be a great addition.

Inspired by Rao's recipe card

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 cup diced carrots
  • 1 red bell pepper
  • 3 cloves minced garlic
  • 1 cup broccoli florets
  • 2 cups diced zucchini
  • 28 - 32 oz marinara sauce
  • 16 oz pasta (whatever type you like)
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmigiano reggiano

Directions

  1. Heat oil in large saucepan and add onions, carrots, bell peppers. Season with salt and pepper. Saute until soft.
  2. Add in garlic and saute for about a minute.
  3. Add broccoli, zucchini, and marinara sauce. Simmer for 5 minutes or until vegetables are tender.
  4. Boil and drain pasta in a large pot
  5. Add vegetables to the pasta. Add mozzarella cheese. Stir to combine
  6. Garnish with parmigiano reggiano and serve
