Ingredients
- 1 large potato (1 lb), peeled and shredded
- 1 small onion (4oz), diced
- 1/4 cup flour
- 1 tsp baking powder
- 1 tsp salt
- a little black pepper
- 1 egg
- oil for frying
Directions
- Shred potato and squeeze dry as possible with cheescloth or paper towels and then combine with onion
- In large bowl mix flour, baking powder, salt, pepper, and egg
- Stir potato and onions into the bowl
- Heat oil in skillet and fry the pancakes
