Beef Crostini

Toasted crostini with a mayo mixture and roast beef

Ingredients

  • 24 slices French bread 1/4'' to 1/2'' thick
  • 2 Tbsp olive oil
  • 1/2 cup mayo
  • 1/4 cup Parmesan cheese
  • 2 Tbsp chopped chives
  • 2 - 4 Tbsp drained and rinsed capers
  • 1/4 tsp garlic powder
  • 1/2 lb deli roast beef
  • 2 roma tomatoes in 24 thin slices

Directions

  1. Heat oven to 350 degrees. Placed bread slices on cookie sheet and brush with oil. Bake for 8 - 10 minutes or until crisp. Let cool.
  2. Combine mayo, parmesan cheese, chives, capers, garlic powder.
  3. Spread mayo mixture on bread slices. Top with roast beef and tomato.
  4. Garnish with chives
