Michelle's Creamy Risotto

Michelle's world famous risotto


1 onion finely chopped
1 1/8 cup risotto
2 oz. butter
3 1/2 cup chicken broth
1/2 grated parmesan cheese


  1. Saute onions in butter until softened
  2. Add risotto and stir mixture
  3. Add stock 1/3 at a time
  4. Cook on low heat (simmer) until liquid is mostly absorbed, then add next 1/3 of broth, then last 1/3
  5. After absorbed stir in parmesan cheese.
  6. Add 1 Tbsp butter and grated pepper to taste
