Enchilada Lasagna


1 lb. ground turkey
1 large onion, chopped
2 large red pepper, chopped
1 package (8oz) cream cheese
1 can green chilli
1tsp chili powder
1 can (10 oz) enchilada sauce
6 soft shell tortilla
1 cup shredded cheese


  1. Cook turkey, onion, peppers over medium heat until meat is no longer pink. Drain
  2. Stir in cream cheese, chili powder, green chillis
  3. Pour enchilada sauce into a pie dish and dip tortillas into the sauce during layering
  4. Spray 9x13 pan with olive oil and layer tortillas, filling, and cheese (2 tortillas, 1/2 of mixture, 1/3 cup cheese).
  5. Bake uncovered at 400 degrees for 20-25 minutes
